Here you are a version of the Paloma cocktail created by the Torre Rosa team.
The “Paloma” (pigeon in english) is one of the most famous cocktails made with tequila and one of the most popular in Mexico. It was created in 1860 by Javier Delgado Corona, owner of the bar “La Capillita”, one of the oldest bars in Jalisco (Mexico), a charming little town with cobblestone streets and classic distilleries in modest homes and cradle of the best tequilas of the world.
The story tells that one day, Javier Delgado, who was a great fan of syrups and the mixture of flavors, ordered a tequila with ice and grapefruit syrup causing strange looks among local people. The surprised bartender brought him a tequila and no ice, but as he knew the locals, Mr. Javier had his own syrup, and in the middle of the bar he made the mixture that would later become the Paloma.
There is also another version about the origin of this cocktail that is attributed to the barman Evan Harrison, who publicized the Paloma as one of the popular cocktails of the Rio Grande, referring to a region of Texas in the USA.
Today, due to its high demand, in border areas between New Mexico and Texas, the Paloma can be found in cans and ready to drink, being one of the favorite beverages of Mexicans because of its strong flavour.
This pink cocktail, traditionally made from white tequila, contains lemon juice and grapefruit soda that defies taste with its freshness, which turns it into an essential combination in summer. According to cocktail experts, grapefruit and tequila are the perfect combination.
With this new variation of the cocktail, the Torre Rosa team intended to make it more pleasant to our customer’s palate. In our proposal we combined white tequila with a pungent smell and taste, lemon juice, pineapple juice, grapefruit juice, that creates it a characteristic slightly bitter citrus touch, and grapefruit syrup. To finish off we add soda, and we conclude with a rim of dried chili and lime, that gives our cocktail of the month of June an exciting and spicy touch very pleasant.
